One of the easiest and wonderful dinners is broiled Salmon. I use Atantic Salmon because it is milder and plentiful. Suggestion for two people:
Ingredients:
- About 1 pound Atlantic Salmon cut into two pieces. Be sure both pieces are about the same thickness for consistency.
- Olive oil
- Any garlic based spice (I use SusieQ's from Sanata Maria).
- Old Bay Seasoning
Preparation:
- Start oven broiler (high)
- Rub top of Salmomn generously with olive oil
- Season evenly with SusieQ's
- Add Old Bay (more or less depending on taste).
- Create a boat with tin foil to hold Salmon skin side down and place on flat cookie sheet.
Cooking:
- Place cookie sheet with Salmon under broiler.
- Broil for about 6 to 8 minutes based on desired doneness. (we like it more well done so do 8 minutes)
- Remove from broiler and ket rest a couple of minutes. I like to use a spatula to lift meat off the skin for serving.
We love this dish with fresh asparagus. Rice goes well too. Enjoy.
Great recipe! We have boatload (no pun intended) of salmon here in Scandanavia and I am always looking for new ways to prepare the tasty fish...
One of my favorites is similar to yours only I use a mixture of Jamaican jerk dry seasoning mixed with a little rum then applied to the top before broiling.

As a variation, use my method above then marinate for about 30 minutes with creamy Italian salad dressing before broiling (I use Newman's Own Olive Oil and Vinegar).
